Nestled in the Spruitdrift area of Olifants River, along the serene West Coast of South Africa, Asylum wines embody a commitment to simplicity and purity in winemaking. Crafted with minimal intervention, our wines reflect the unique terroir of this region, celebrated for its well-drained loam and red sand soils interspersed with light clay patches.
Vineyards
Our vineyards, averaging 13 years old and meticulously trellised and irrigated, epitomize the balance between tradition and innovation. Located in the Olifants River region, they yield grapes that are handpicked in the cool morning hours to preserve their natural flavors and integrity.
Vinification
The journey of Asylum wines begins with the careful selection of grapes, which are handpicked and swiftly transported to our winery. Upon arrival, they are gently pressed and chilled, then settled for two days to clarify naturally. Each grape variety—respecting the native yeasts that shape their character—is vinified separately in neutral tanks. After eight months of aging and meticulous blending, our wines undergo cold stabilization and light filtration before bottling, ensuring that every bottle retains the essence of Olifants River's terroir.
