This Cabernet Sauvignon is a Will and Miller exclusive from Stellenbosch’s Polkadraai Hills. Sourced from a 20-year-old vineyard planted on decomposed granite and koffieklip. Leaves are removed from the bunch zone to ensure better colour development, even ripening and to prevent any green flavours. The grapes were hand-picked and destemmed before fermentation in open-top fermenters. Maturation was done for 12 months in French oak barrels (20% new), before being blended and taken back to older barrels for an additional 8 months.
What can you expect?
A very attractive nose dominated by blackberries, blueberries, and red cherries, with subtle hints of peppadew and pencil shavings at the back. The palate shows the typical elegance of Polkadraai Hills Cabernet Sauvignon, with wonderfully fine tannins and medium weight. This wine has incredible fruit purity, framed by subtle oak aromas and brought together with a lively acidity.
