The Quantum range, inspired by Bartolomeu Dias' 1488 discovery of the Cape of Good Hope, celebrates curiosity, creativity, and collaboration. Since 2008, Quantum red blends have been exported along historic trade routes. Cool-climate grapes are sourced from the Cape South Coast of the Western Cape, where a combination of sandstone, quartz, and broken shale creates a unique terroir. The cool maritime climate and strong winds temper the vineyards, restricting skyward growth and allowing for gradual ripening. This results in wines with distinctive varietal characteristics, low yields, and concentrated, complex flavors that reflect the uniqueness of the region.
This Sauvignon Blanc offers aromas of smoke and brine, citrus blossom, and orchard perfume, followed by a palate of tropical fruit like pineapple skins, granadilla, and paw-paw. The wine is bright with citric acid, zingy and pithy, with a dry and salty finish and lingering notes of lime-splashed kiwi. Harvested early in the morning at 23° Balling, grapes are layered in dry ice to reduce oxygen contact and transported in cold trucks for vinification. After crushing and de-stemming, the juice is kept on the skins for 6 hours before being settled and racked. Following fermentation, the wine spends 4 months on fine lees before fining, stabilization, and bottling. This dry, white, still wine originates from the Cape South Coast and is made from 100% Sauvignon Blanc. Alc 14%, TA 5.6g/l, RS 4.3g/l, pH 3.54.
