Nestled in the Walker Bay vineyards of Hemel-en-Aarde Ridge, our vineyards bask in the gentle embrace of the nearby Atlantic Ocean. The maritime climate here is a testament to temperance, where mountain ranges stand as guardians, guiding southerly sea breezes through the appellation during summer. These refreshing winds carry with them the allure of sea mists, enshrouding the valley in a veil of overcast conditions, ensuring consistently even temperatures. With an average of 19°C and rainfall of approximately 750mm per year, our vineyards thrive under nature's gentle hand.

Harvest Details:

Crafted with precision, our Shiraz grapes are hand-harvested in the cool embrace of early morning temperatures. The harvesting process spans two distinct blocks, each meticulously tended to throughout March to unveil a symphony of flavors. One block, kissed by dappled light, imparts spicy aromas and a savory essence, while the other basks in sunlight, enhancing primary fruit weight and intensity. The result? A wine of unparalleled complexity and character.

Technical Notes:

Our winemaking journey begins with overnight cold storage, followed by the delicate destemming and crushing of grapes into red ferment tanks. Cold maceration ensues for 3 – 7 days, setting the stage for controlled fermentation until dry. The skins, having imparted their essence, are gently pressed, and the wine finds its home in a selection of French Oak Barriques for 12 months of aging and maturation. Two months prior to bottling, final blending takes place, allowing the wine to evolve gracefully in the bottle before its eagerly awaited release.

Styling:

Elegance in every sip, our cool climate Shiraz is a symphony of soft plum, dark cherry, and an intricate dance of spices. Pepper, cinnamon, cloves, and crushed coriander intermingle on the palate, which unfolds with richness and depth. Whether enjoyed now or cellared for the next five years, this wine promises an experience that transcends time.
