Released a year after vintage, this wine embodies the essence of slow-developing cool-climate Sauvignon Blanc.

Embark on a journey reminiscent of Adam and Eve's temptation in the Garden of Eden, where the allure of forbidden fruit beckons. In Hemel-en-Aarde, amidst the fervor for Chardonnay, we dare to plant Sauvignon Blanc—a decision driven by a quest for knowledge. Indulge in the forbidden fruit of the Hemel-en-Aarde region with our Sauvignon Blanc, a blend of 96% Hemel - en - Aarde Ridge Sauvignon Blanc and 4% Hemel - en - Aarde Ridge Semillon.
Climate:
Our vineyards in the Walker Bay region of Hemel- en - Aarde Ridge bask in the gentle embrace of the nearby Atlantic Ocean. Here, a temperate maritime climate prevails, sculpted by the southerly sea breezes that traverse the appellation during summer. These breezes usher in regular sea mists and overcast conditions, ensuring balanced temperatures year-round. With an average temperature of 19°C and approximately 750mm of rainfall per year, our vineyards flourish under nature's nurturing hand.
Harvest Details:
Hand-harvested in the cool tranquility of early morning temperatures, our grapes are carefully selected at varying stages of ripeness throughout early to mid-March, allowing for a nuanced and complex wine profile.
Technical Notes:
Early morning harvests give way to meticulous winemaking techniques, with Sauvignon Blanc and Semillon grapes undergoing gentle destemming and crushing at cold temperatures. Following a delicate pressing, the juice settles for 48 hours at 10°C. Spontaneous fermentation unfolds separately in stainless steel tanks, with temperatures maintained between 12-18°C until the wine reaches dryness. After fermentation, the wines are expertly blended and left to rest on fine lees for six months before undergoing filtration and bottling.
Styling:
Derived from vines rooted in a mosaic of shale and clay-based soils, our Sauvignon Blanc showcases the broad richness of clay on the palate, accompanied by aromatic tropical fruit and mineral nuances on the nose. The Semillon adds layers of white floral notes, pear drop, and hints of lemon grass, culminating in a palate of full mineral expression.
