Vinification
Crafted in the time-honored tradition, this Method Cap Classique begins with hand-harvested grapes on the morning of January 27, 2017, at 18.5˚B. After gentle whole bunch pressing following cooling, the free-run juice undergoes overnight settling at 8°Celsius with pectolytic enzymes. Fermentation occurs in stainless steel tanks at a constant temperature of 12°C for approximately 15 days. Secondary fermentation takes place in the bottle, followed by 72 months of maturation on the lees.
