Viticulture
To enhance the complexity of the wines, different sections of the Pinot Noir and Chardonnay blocks are harvested at various times. Grapes are always picked early in the morning, placed into small lug boxes, and transported to the cellar in Stellenbosch using cooled trucks.
Viniculture
Upon arrival at the cellar, the grapes are gently pressed to extract the juice, which then settles overnight. For the Black Series, some of the juice is fermented in old wooden barrels, while the remainder is fermented in stainless steel tanks. Small batches of wine are made to ensure the highest quality. The wines are blended and aged on the lees before undergoing a secondary fermentation in bottles using the Methode Cap Classique method.
Maturation
The 2018 Black Series MCC was aged on the lees for 4 years before disgorgement. Following disgorgement, the bottles were stored for an additional six months before being released.
Tasting Notes
The 2018 Black MCC displays aromas of tropical yellow fruit, lemon zest, green apple, and biscuit. These notes carry through to the palate, where the green apple and citric acidity are evident. The delicate mousse and fine, persistent bubbles enhance the crisp and refreshing character of this MCC.
