Viniculture
The Shiraz grapes were harvested in March 2018 and fermented in a combination of concrete open casks, French oak barrels, and stainless-steel tanks. During the first two-thirds of the fermentation period, the wine was punched down up to five times per day to ensure optimal extraction. For the remainder of the fermentation, gentle pump-overs were employed. After fermentation, the wine was left on the skins for 21 days for post-fermentation maceration before pressing. Malolactic fermentation occurred in barrels to achieve optimal oak integration.
Viticulture
The grapes for this wine were sourced from Quoin Rock vineyards in the lower areas of the Simonsberg. The north-facing vines receive ample sunlight and heat during the summer, moderated by cooling southern winds. The well-draining Hutton and Clovelly soils encourage vigorous growth and rich fruit expression.
Maturation
The Shiraz was aged in 50% new French oak barrels of 225 litres and 500 litres. After 22 months in barrels, the wine was blended and bottled, then aged for an additional four years before release.
Tasting Notes
This Rhône-style Shiraz presents aromas of white pepper, plums, and cassis, complemented by a richly textured palate. The new oak imparts subtle hints of pencil shavings and spice, enhancing the fruit profile while maintaining balance.
Food Pairing
The Shiraz pairs well with creamy blue cheese, camembert, and sharp cheddar. It is also a great match for a steak braai (barbecue) or dark venison pie. Additionally, it complements braised short ribs, venison medallions, and lamb tagine. On its own, it beautifully expresses the classic characteristics of Shiraz.
