Name Inspiration:
Derived from the Latin term "Credo," meaning "I Believe," our Credo Chardonnay embodies our winemakers' unwavering belief in crafting an elegant, ever-graceful wine that stands shoulder to shoulder with the world's finest. It is a testament to our commitment to excellence and passion for winemaking.
The Vineyards:
Sourced from select vineyards nestled within the renowned Stellenbosch region, our Chardonnay grapes are meticulously cultivated to achieve optimal ripeness. Handpicked during the third week of February 2018, they embody the essence of the terroir.
The Winemaking Process:
Upon harvest, the grapes embark on a journey of transformation. Fermented in 300-liter French oak barrels, the wine rests on the primary lees for eight months, undergoing gentle batonnage monthly. Afterward, it is racked from the primary lees and returned to the same French oak barrels, where it ages for an additional three months. Barrel selection ensures only the finest barrels are chosen to impart their essence. Lightly filtered before bottling, our Chardonnay is a testament to meticulous craftsmanship and attention to detail.
Winemaker's Comments:
A vision of pale gold with hints of green, our Credo Chardonnay captivates the senses. A voluptuous body unfolds with aromas of buttered toast and crème brûlée, while a firm structure carries a mélange of citrus, treacle toffee, melon, and a hint of ginger. The finish is seamless, lingering long after the last drop has been savored.
Maturation Potential:
While ready to be enjoyed now, our Credo Chardonnay boasts a maturation potential of three to five years, promising to evolve and delight with age.
