Waterford PEATED Ballybannon 1.1, Arcadian Barley, SFO
This is the first time in generations that we can find Irish whiskeys designed in this way, marking a return to a certain tradition, since peat has for centuries been the main means of heating on the island. This edition is a single farm, since the barley comes from the Ballybannon farm, while the peat was harvested in County Kildare. This peated single malt at 47 ppm combines an assertive smokey character, with maritime and earthy notes, as well as a very interesting pastry structure (lavender honey, apple pie, buttery notes).
Tasting Notes
Appearance: Light gold with everlasting oils
Nose: Soft peat, almonds, crisp, lavender honey, reminds me of a seaside escape, driftwood fire smoke, green apples, padrón peppers, salt crust, a morning walk on a fresh day.
Palate: Peat kick, very chewable, BBQ fish by the sea, buttery, warm apple and almond tart with honeycomb ice cream, wool, frangipane, samphire.
Finish: Long and delicate.
