WINEMAKING PRACTICES: Hand-harvested Cabernet Sauvignon in Stellenbosch in the first 2 weeks of March. Sorted by bunches and berries, then cold soaked for 7 days before natural fermentation kicked in. Fermenting on the skin for a total of 21 days. Pressed from skins to barrel where it finished malolactic fermentation and left on the lees for 14 to 16 months before it was racked and it stabilised the wine and then light filtration with bottling.
