Vineyard and Varieties
Sourced from meticulously tended vineyards, their Colombar and Chenin Blanc grapes are selected across four precise harvests to ensure optimal ripeness and flavor development. Vinification Process
Our winemaking journey begins with whole bunch pressing, followed by a patient settling period of 24 hours. The clarified juice is then transferred into a combination of barrels and cement vessels, where natural fermentation takes place. This method allows the wine to develop complexity and depth as it rests on its primary lees for a full 10 months. We believe in minimal intervention, hence no fining agents are used, allowing the wine to express its truest nature.
